Five Meals for Your Family Table..... Week 18

The rain is finally ending here, so we are back out on the grill this week! Some pasta, a favorite chicken dish and a new burger recipe are on the menu this week. I hope some of these meals make it to your family table this week!
This Lemon Asparagus Pasta with Scallops just feels like Spring to me! It comes together pretty quick and its kid approved in our house! You can grab the recipe here
Hummus Crusted Chicken is a new favorite here. Simple dish, full of flavor! I put about a pound of chicken breasts in a 13*9 glass dish, sprinkle with salt & pepper and cover in about 3/4 cup of hummus. I used garlic hummus, but you can use any flavor you want. Bake at 450 for about 25-30 minutes, until the chicken is cooked through. We paired with with some Mediterranean couscous. Toss cooked couscous with some chopped cucumbers, tomatoes, kalamata olives, parsley, and feta. Drizzle with a little EVOO, the juice of half a lemon and season with salt & pepper. 
Kabobs are always a great dinner solution in the summer. Skewer up any protein, lots of veggies and throw on the grill. These grilled Pork & Apple Kabobs are so good! We love them in early fall, but they are perfect now too. You can grab the recipe here.
BBQ Chicken Salad is a go to in our house during the warmer months! Grill some chicken (or use a rotisserie chicken) and then build your salad. Some of our favorite topping are black olives, bell peppers, corn and tortilla strips. Instead of dressing, we just drizzle a little bit of BBQ sauce over top. You can also mix some BBQ with plain greek yogurt for a creamier dressing option!
