Five Meals for Your Family Table....Week 44

Hello there Monday!! Are you guys feeling super rested with that "extra hour" of sleep you got yesterday???
Just kidding.... refill that coffee and grab your shopping list. We have your meal plan for the week right here.
This Roasted Shrimp Pasta with spinach & tomatoes is a simple dinner to get on the table, especially on a Monday! I roasted a pound of shrimp seasoned with a little EVOO and salt and pepper. In a large bowl, put in a pint of cherry tomatoes (halved), a few cups of fresh spinach, some chopped black olives and  2-3 TBSP of an herb infused olive oil. Toss in some warm pasta and the spinach began to wilt. Season with a little salt & pepper and plate with some of the shrimp and feta cheese. (the kids went with parmesan cheese),
Sometimes I get "tacoed-out" for Taco Tuesday, but I could still eat Mexican food everyday. This Chicken Fajita Soup has all the tastes I am looking for and comes together in no time. Click here for the recipe.
My house loves salmon. I am always preparing it a different way to mix things up. I came across these salmon sliders on Brittany's blog a few weeks ago and they were so good.
I doubled the recipe and the kids ate theirs on slider buns and I put mine with a salad. A new favorite in our house. You can grab the recipe here.
It's getting cold here, so comfort food always sounds good! Try this Better for you Chicken Parm with Spaghetti Squash this week. All the flavors of that comfort dish, with a little less guilt. Grab the recipe here.
Speaking of making comfort food a little better for you, this Shepherd's Pie is full of flavor and made a little better for you with a cauliflower crust. It's a perfect meal to end the week. You can grab the recipe here.
Have a great week friends. See you soon....there's always room for one more at our family table.
