Five Meals for Your Family Table....Week 49

Happy Monday friends! Gosh we had a fun filled holiday weekend....and I could sure use one more day between Sunday & Monday! You know, something like this....

At least I know what we will be having for dinner this week. And it's a cozy menu, because we have been buried in snow here the last few days. A new favorite soup and two slow cooker meals are part of this week's plan.
I love a good soup in the colder months, so when I saw this recipe for  Carrot Soup & Roasted Veggies I had to try it. This soup is so full of flavor and a bit healthier as it gets the creaminess from white beans. The perfect fit for Meatless Monday. You can grab the recipe  here.
We tried these Slow cooker lentil tacos a few weeks ago and they were a hit. I am always on the lookout for healthier crockpot options and this recipe was perfect. The flavors were similar to what you would taste in a traditional beef taco. We layered the lentils into tortillas and topped with our usual taco fixings. You can grab the recipe here.
I saw a recipe for Thai Basil Beef with Coconut Rice a few weeks ago and had to try it. It was amazing. Everyone in my house loved it. We will be making this one again and again. You can get the recipe here. I did sub in liquid aminos for the soy sauce.
On busy weeknights, I love to keep it simple with a crockpot dinner. I found this recipe for  Crockpot Chicken Cacciatore from  Mix & Match Mama. It was so easy and so full of flavor. She suggested putting it over egg  noodles, but we put it with cauliflower rice.... a delicious and easy meal!
It's the end of the week and time for something easy! These Mediterranean Chicken Pitas are the answer! You can set it up as another "build your own" and the Tzatziki sauce mixes up in no time! They can be made ahead of time and you can take them on the go if the kids are running to their after school activities during the dinner hour!
