Something New for Your Family Table Week #17...Grilled Mediterranean Eggplant

Hey friends!! The weather here has been beautiful and I just want to grill something everynight! I am on the hunt for some great meatless options for the grill this Summer. 
This Mediterranean Grilled Eggplant was amazing and has such a simple ingredient list. Like 5 ingredients simple.

It was a meal for us with a side salad, but you could easily serve it as a side dish if you prefer to have meat with your meal too.

Here is what you will need, keeping in mind this recipe served 4.

Ingredients
3 medium eggplants
3 ripe tomatoes, choppped
1/2 small onion, chopped
a handful of fresh basil, chopped
Salt & pepper
EVOO
Feta Cheese or Goat Cheese

Wash your eggplant and slice it. You can slice it either lengthwise or into rounds. I did a little of both. Now there is a lot of talk out in the food world about "salting your eggplant" before cooking it. Two reasons for this. One being to absorb the bitterness and the second is to draw the water out. If you ask me, this could be an optional step. I added a few teaspoons of salt to a bowl of water and soaked the eggplant for half an hour. I gave them a quick rinse, patted dry and they were ready to go.
While the eggplant is soaking you can prepare the simple topping. 
I mean really simple.. toss the tomatoes, onion, and basil together. Drizzle with EVOO and season with salt & pepper. Yep that's it. 
Now that the eggplant is ready after the first step, brush each side with a little EVOO and sprinkle with salt & pepper. Grill over medium heat for about 3-4 minutes per side.
Top with the tomato basil mixture and your choice of cheese. My kiddos are not big fans of feta or goat cheese, so I added some mozzarella to theirs.

These flavors are so simple, and so delicious. My whole family loved it and it will be making an appearance at our table a lot this Summer!
